I’m no writer.
I also always forget to take pictures of food, and it’s always eaten by the time i remember.
I remembered with these, made a joke about blogging, found a blog name and got a blog in the last 24 hours or so.
These are cupcakes.
What I’m going to do first though, I guess, is introduce my favourite basic white cake recipe.
I also have never made it white… it’s always rainbow. More to follow. I can’t stick to one thing. Google it if you want to know how to rainbow cake. it’s easy.
One disclaimer before I post a recipe: I do not know how long to bake it, I can describe basic method but I keep it VERY simple… which can complicate things.
Basic White Cake
preheat oven to 350°C
Cream together – 1 C White Sugar
1/2 Butter or Margerine ( I’ll specify if butter is absolutely necessary)
add 2 eggs, 1 at a time.
add in – 1 1/2 tsp vanilla
1/2 tsp almond extract (omit and use vanilla if you want)
in a separate bowl, whisk – 1 1/2 C flour
1 3/4 tsp Baking Powder
add flour mix to butter mix, and mix in 3/4 milk until smooth. (any milk works)
Bake in cupcake or cake pan. I recommend doubling it if you want a reasonable sized bundt cake (or to make enough rainbow batter)…
It’s done when a toothpick comes out clean and not battery… keep an eye on it.
