So, for my second post I’ve been arguing about whether to do my inspiration apple cupcakes, or the cupcakes I baked yesterday.
Decision? Both. I shall write two posts! (I have that same problem shopping sometimes)
Apple Cinnamon Cupcakes
I started with my Basic White Cake;
I just made some minor changes.
Instead of the vanilla, i did about 1 tsp vanilla, 1 tsp cinnamon, just under 1/2 tsp nutmeg and about 1/4 tsp butter flavouring. (I use Wilton brand, got it online… I’m not sure it was necessary, but i wanted the cake to taste sort of like pie crust)
While it was baking I made the apple filling.
I cut about 4 apples into small pieces, added maybe 2 tbs of brown sugar, 2 tbs water and about 1 tbs of Jim Beam Bourbon. (Courtesy of my mom on her last visit! =P)
I cooked that on medium heat until the apples were soft and tasted good(add or lessen sugar as you feel necessary, I don’t like overly sweet things, and the cake is quite sweet.) When apples are almost done, i added maybe 1 tsp cornstarch, stirred it until thickened and took off the heat.
I shoved the lids back on, also. The icing hides how they don’t quite fit, i actually think it made them look taller, without using excessive icing.
The icing consists of about 1 brick of softened cream cheese, 1 tsp vanilla and Icing sugar until pipeable… I taste it every once and a while while I add sugar. Again, I don’t like it too sweet.
My roommate ate two consecutively when she found them later that night. They all disappeared after I brought them to work.
