It’s good that my friends have birthdays, or I’d forget to blog ALL THE TIME. I’ve been cooking and baking (minus the week I was on vacation) but forgetting to photograph, or I’ll just get too lazy… HAPPY BIRTHDAY HEATHER!! Heather edits my posts, so if the spelling is bad, it’s her! Also, I’m awesome. I wrapped this awesome present. And baked and made things. Really. And I bought her earrings. Best. Friend. Ever. (Me… I’m not arrogant.)
For Heather’s birthday I made a few things. First, homemade vanilla latte’s!! These were simple. I made a pot of coffee (we usually drink it strong) heated up about 2.5c milk and 2 tbs sugar andabout 1.5tbs vanilla in a pot while whisking. It can then be transferred to a blender if you want foam and fluffy milk, but this is risky as my blender exploded a bit everywhere. I then just added it to the coffees. It was great the next day too reheated as I hastily got ready for work.

Second I made these, Oreo Pancakes. I pretty much followed the recipe. I had to double it for the two of us, they were definitely not enough. I also used regular milk, and the filling I attempted hers, but defaulted to mixing in cool whip. I think whipped cream and chocolate sauce would have been better. Third, I made my mom’s “cheating cheesecake”. I made it the night before, it requires a few hours to set. This is a family recipe, that I, as usual,
fucked messed around with.
Mom’s Cheating Cheesecake
Mix together (preferably with handmixer):
–1 brick cream cheese (softened)
–1/3 c sugar
Then fold in most of a tub of Cool Whip (it was like a huge 1L tub – I saved some for either the top of the cake or pancakes).
Fold in 1 can mandarin oranges and about 1/2 can peaches (I sliced them smaller) drained. If dividing, I like to experiment with two different flavours. Raspberry is really good, but mandarin is my standard. Try it! If not dividing like I did, you can experiment or just use two cans of mandarins.
At this stage you can divide into 2 pre-made graham crusts, or I used my 9″ springform and made my own by blending graham crackers, almonds and then mixing with melted butter until it looked like enough, pressing into pan and baking at 350° for something like 15 minutes. I almost forgot about mine, since I was talking to Mom while I was baking.
Let crust cool, spread on filling, chill for something like 4 hours or overnight. Eat.
