Hey guys (okay, seriously, hi mom! since you’re my only reader!)
I made these bagels, like, forever ago. But they were great!
Bagels were something that seemed scary when I first came across them. They aren’t. They’re essentially a very yeasty bread with some boiling. Like a bread pasta hybrid!
My recipe! (I love my hand written sticky note recipes)
Proof – 6 tsp yeast (I always work with quick yeast)
4 1/2 tbs Honey/Molasses (go nuts!)
3 3/4 c warm water
Stir in – approx. 10 1/2 c bread flour. You can experiment with types of flour. Divide into three if you’d like. I usually go with just a generic random mix of stuff. Rye is good, as well as whole wheat or a combination.
Knead for about 10 mins. I like to watch Stargate..
Let rise about an hour until doubled. Punch down. Rest x 10 minutes.
This is where I divided my bread into 3. I made 2/3 of it into 12 balls, and the other 1/3 I added cinnamon and raisins to.
I made about 10 everything bagels and a couple plain bagels.
Making the bagels basically consists of shoving your thumb through the middle of the ball of dough and spinning it around until it’s bagel-esque.
Let rest/rise x 10 more minutes.
Boil bagels on med heat with some honey or mollasses in the water, about 1-2 minutes a side.

Actually, feel free to use her recipe. It uses significantly less yeast. In fact, I REALLY need to research doubling recipes with yeast…
Mix – 1 tbs Poppy Seeds
1 tbs Flax Seeds
1 tbs dried garlic
1 tbs dried onion (I used powder for both)
1/2 tsp salt ( If you want)
